Method

  1. Tip the cassava semolina into a bowl, salt it, then work in the warm water with your fingertips until the grains are damp and separate.
  2. Leave for 15 minutes so the grain swells. Rub again between your palms to break up any lumps.
  3. Line a steamer basket with a clean cloth and add the semolina without pressing it down.
  4. Steam for 20 minutes, fork it through, then steam for 15 minutes more.
  5. Press the hot semolina into an oiled bowl to form a firm cake, then turn it out onto a plate.
  6. Meanwhile soften the onion in the oil, add the chopped tomatoes and the chilli, and reduce for 10 minutes.
  7. Serve the cake cut into wedges with the sauce alongside.

Attoukpou and attiéké start from the same fermented cassava. The difference is the pressing: here the hot semolina is compacted into a bread you can slice.

What is the difference between gari and fermented cassava semolina?

Gari is fermented cassava that has then been toasted, so it is drier and sharper than the raw semolina. It drinks more water: add it gradually rather than all at once, until the grains are damp and separate, and let it swell before deciding whether it needs more.

Why must the semolina be pressed while still hot?

Heat is what makes the starch tacky enough to bind the grains together. Cooled semolina no longer binds: the cake looks formed in the bowl, then crumbles the moment you turn it out or slice it. Press it firmly in an oiled bowl straight from the steamer.

How do I store and reheat the cake?

It stays supple for a few hours at room temperature under a cloth. In the fridge it hardens and turns floury again. The best repair is another ten minutes in the steamer, which restores its softness, whereas a microwave only dries it out.
