Method

  1. Brush the chanterelles clean. Skip washing them, since they drink water. Halve the larger ones.
  2. Dry-fry them for 5 minutes in a hot pan, until they release their water and the pan runs dry again.
  3. Add the oil, the sliced onion and the chopped garlic. Continue for 6 minutes over medium heat.
  4. Grate the tomatoes on the coarse side of a grater and add the pulp to the pan with the chilli and salt.
  5. Reduce for 10 minutes, until the sauce coats the back of a spoon.
  6. Add the beans with the stock and simmer uncovered for 15 minutes.
  7. Crush a ladle of beans against the side of the pan to thicken, then add the epazote at the last moment.

Anacates come up under highland pines after the first May rains. Dry-frying them concentrates their scent before any fat can seal it in.

Why should I not wash the chanterelles?

They soak up water like a sponge, and that water comes back out in the pan, so they boil instead of browning. A brush is enough to get rid of soil and pine needles.

What does the dry pan step before the oil achieve?

Chanterelles release their water first, and while it is there they cannot colour. You wait for the pan to go dry again, then add the oil, which seals in the concentrated aroma rather than diluting it.

What can replace epazote if I cannot find it?

Fresh coriander, already offered in the ingredient list, is the practical swap. It lacks the resinous bitterness but gives the same fresh lift stirred in at the end.
