Method

  1. Cook the rice with a little garlic, oil and salt in 600 ml water, covered, for 15 minutes. Rest it for 10 minutes.
  2. Heat 1 tbsp oil, cook the onion and remaining garlic for 5 minutes, then add the beans with their liquid and the cumin.
  3. Simmer the beans for 10 minutes, mashing a ladleful against the side of the pan to thicken them.
  4. Toss the cabbage with the tomato, lime juice and a pinch of salt. Keep it cold.
  5. Cut the plantains on a slant and fry for 3 minutes a side, until the edges brown.
  6. Fry the eggs in the remaining oil, whites set and yolks loose.
  7. Build each plate with the rice, beans, plantain, salad and egg set side by side.

Casado means married, and the name describes a plate where the parts sit together without merging. Yesterday’s rice gets a second life here as gallo pinto, fried with the beans and a spoonful of Lizano sauce.

Which plantains should I use here?

You want very ripe plantains, the skin heavily blotched with black. That sugar is what caramelises into the browned edges. Green or pale yellow plantains stay starchy and bland; save those for twice-fried tostones.
