Method

  1. Heat the oil in a wide pan and fry the cumin, cardamom, cinnamon and bay for 30 seconds, until fragrant.
  2. Add the onions and let them brown steadily for 10 minutes, stirring; that deep colour carries the whole dish.
  3. Stir in the garlic and ginger paste and cook 2 minutes more, until the raw smell goes.
  4. Pour in the blended tomatoes, ground coriander and chilli powder, and reduce over medium heat for 12 minutes, until the oil separates at the edges.
  5. Add the chickpeas, 150 ml water and salt, crush a handful of the chickpeas against the pan to thicken, and simmer uncovered for 10 minutes.
  6. Finish with the amchur and garam masala, stir, and adjust the sourness and salt.
  7. Fish out the cinnamon and bay, scatter with coriander and red onion, and serve with rice or flatbread.

Unlike the coconut curries of the south, chana masala is deliberately dry: the sauce should cling to the chickpeas rather than drown them. Amchur gives the sharp North Indian sourness; a squeeze of lemon will stand in.

What is amchur, and what can I use instead?

It is unripe mango, dried and ground to a powder, and it brings sharp acidity without adding liquid. Stir it in at the end so it keeps its bite. If you cannot find it, a squeeze of lemon juice at the table does much the same job.

What does it mean to wait for the oil to separate at the edges?

It signals that the tomatoes have cooked out their water and the sauce is actually cooked, not merely hot. While the mixture stays wet and bright red it still tastes of raw tomato. A film of oil rising around the mass means you can add the chickpeas.

How do I thicken the sauce without cream or coconut?

Crush a handful of chickpeas against the pan with your spoon; their starch binds the liquid. The final simmer is uncovered so water can evaporate. The sauce should cling to the chickpeas rather than pool around them.
