Method

  1. Drain the beans and chickpeas, then rub the beans between your hands to slip off any loose skins.
  2. Soften the onion in the oil for 5 minutes, add the cumin, paprika and cinnamon, and stir for 1 minute.
  3. Add the beans, chickpeas and water. Bring to the boil then simmer, covered, for 1 hour.
  4. Add the cracked wheat and cook for 30 minutes more, stirring now and then so the base does not catch.
  5. Salt at the end, once the beans are tender. The dish should stay moist without turning into soup.
  6. Serve hot with a thread of raw olive oil over the top.

Why rub the beans after soaking?

Dried broad beans have a thick skin that loosens after a night in water. Left on, it stays leathery even after an hour of simmering and peels away from the bean in the pot. Rubbing the beans between your hands removes most of it.

Why hold the salt back until the end?

Salt added early slows down broad beans and chickpeas, which can stay firm for a very long time. Wait until the pulses are genuinely tender, then season; the cracked wheat that goes in afterwards will take up the salt.

It keeps catching on the bottom of the pan. What can I do?

The cracked wheat releases a lot of starch during the last thirty minutes and settles on the base. Use a heavy-bottomed pot, stir regularly while scraping the bottom, and add hot water if the mixture tightens too much.
