Method

  1. Cut the pitas into 3 cm squares and toast in the oven at 200°C for 8 to 10 minutes, or fry in a little oil, until golden and crisp.
  2. Toast the pine nuts in the olive oil over low heat for 2 to 3 minutes, watching closely, then set aside with their oil.
  3. Mix the yoghurt, tahini, garlic, lemon juice and a pinch of salt into a smooth sauce. Loosen with a little water if needed.
  4. Warm the chickpeas in their liquid with the cumin and a pinch of salt for 5 minutes.
  5. Arrange the pita pieces in a serving dish and pour over the hot chickpeas with a little of their liquid to soften the bread slightly.
  6. Spoon over the yoghurt sauce, then the pine nuts with their hot oil. Scatter with parsley and paprika and serve at once.

Fatteh is assembled at the last minute so the bread keeps some crunch under the sauce. The contrast between hot chickpeas and cold yoghurt is the whole pleasure of the dish.

Why assemble fatteh at the very last minute?

The toasted bread softens within minutes under the hot chickpeas and sauce. The whole point is the contrast between still-crisp pieces, piping hot chickpeas and cold sauce: made ahead, the dish turns uniformly soft.

Why spoon some of the chickpea liquid over the bread?

That slightly starchy liquid moistens the bread just enough to soften without dissolving it, and seasons the base of the dish. Plain water would sog it without adding anything.

How do I get a smooth tahini sauce?

Tahini seizes abruptly when it meets lemon and water before loosening again. Whisk until it relaxes, then add water a spoonful at a time. Use an unsweetened plant yogurt, or the sauce ends up cloying.
