Method

  1. Stir the yeast and sugar into the warm water and leave for 10 minutes until foaming.
  2. Mix the flour and salt, pour in the yeast liquid and the oil, then knead for 8 minutes to a soft, smooth dough.
  3. Cover and prove for 1 hour somewhere warm, until doubled in size.
  4. Heat the oven to 250°C with a baking tray inside. Divide the dough into four balls and roll each into a 20 cm disc.
  5. Stir the za'atar into the olive oil to make a thick paste and spread it generously over the discs, leaving a 1 cm border.
  6. Bake on the scorching tray for 10 to 12 minutes, until the edges are golden but the bread is still soft. Serve hot, folded, with raw vegetables.

In Lebanon manaqeesh come from the neighbourhood bakery at dawn and get eaten folded in half on the walk home. Preheating the tray mimics a stone oven and keeps the base pliable.

Frequently asked questions

Why mix the zaatar with oil instead of sprinkling it on?

Dry, it scorches in a 250C oven and turns bitter. Bound into a thick paste with oil it is protected, it clings to the dough, and its aroma infuses rather than burning off. The equal proportions in the recipe give the right consistency.

Why heat the tray inside the oven first?

A scorching tray sears the base instantly and imitates the neighbourhood bakery's deck oven: the flatbread puffs quickly and stays soft. On a cold tray the dough bakes slowly and dries out. Allow at least half an hour of preheating.

Mine came out hard like a cracker. Why?

It baked too long. A manqoucha should stay soft enough to fold in half, with only the edges coloured: ten to twelve minutes is enough in a very hot oven. Take it out as soon as the rim takes colour, even if the middle still looks pale.
