Method

  1. Chop all the herbs very finely. Fry them in 4 tbsp of the oil over medium heat for 20 minutes, stirring often, until they darken and smell deep and savoury.
  2. In a casserole, soften the sliced onions in the remaining oil, add the turmeric and let it cook for 1 minute.
  3. Cut the mushrooms into large quarters and brown them with the onions for 8 minutes, until their water has cooked away.
  4. Pierce the dried limes twice each with a knife tip and add them with the fried herbs and 700 ml water.
  5. Cover and simmer very gently for 1 hour, then stir in the kidney beans and cook uncovered for another 30 minutes.
  6. Season, and press the limes against the side of the pan to release more juice if you want extra sourness. Serve with basmati rice.

Ghormeh sabzi is Iran’s national dish, and its near-black colour comes from patiently fried herbs, not burnt ones. The dried limes give a fermented bitterness that fresh lemon cannot imitate.

My herbs burnt instead of darkening. How do I avoid that?

The 20-minute herb fry is done over medium heat, stirred often, in a generous amount of oil. They should darken slowly and smell deep; the moment they catch on the base or smell scorched, the stew keeps a bitterness you cannot remove.

What can replace dried black limes?

Nothing really does: they carry a fermented bitterness that lemon juice lacks. If you cannot find them, accept a different dish by adding lemon juice at the end, and do not expect the same depth.

The stew turned bitter. Where does that come from?

Usually from the black limes being crushed too early or left whole too long. Pierce them in two places only, and press them against the pan only right at the end, when you actively want more sourness.
