Vegan kookoo sabzi

The Persian green herb cake, a mountain of fresh herbs bound with a chickpea-flour batter, with walnuts and barberries.

Method
- Whisk the chickpea flour with the water, baking powder, turmeric, cumin, salt and pepper into a smooth batter. Rest for 10 minutes.
- Fold in all the herbs, the spring onions, walnuts and barberries. The mix should be very green and only just bound.
- Heat the oil in a 24 cm non-stick pan over medium heat. Pour in the batter and smooth the top.
- Cover and cook for 12 minutes over low heat until the base is golden and the top almost set.
- Cut into wedges in the pan, flip each one and cook for 8 minutes on the other side.
- Serve warm or cold, with flatbread, plant yoghurt and radishes.
The classic version is bound with eggs. Chickpea flour holds it together just as well, with a nutty note that suits the herbs.
