Method

  1. Drain the maize and beans, then put them in a large pan with 1.5 litres of cold water.
  2. Bring to the boil, skim, then cook covered for 75 to 90 minutes. A maize kernel should crush between two fingers.
  3. Drain, keeping 200 ml of the cooking water.
  4. Heat the oil in a wide pan and brown the onions for 8 minutes.
  5. Add the garlic and cumin, stir for 1 minute, then add the tomatoes. Let them break down for 8 minutes.
  6. Add the maize, beans, salt and reserved water. Simmer for 10 minutes, crushing a few beans against the side of the pan.
  7. Scatter coriander over and serve with fried greens or avocado.

The salt goes in after the pulses have cooked: added to the starting water it toughens the bean skins and stretches the cooking time. Kikuyu families cook githeri in quantity and reheat it across several days, each turn in the pan making it denser.

Frequently asked questions

Can I use tinned sweetcorn?

No, it is a different product. Githeri uses dried white maize, which stays firm and slightly floury after an hour and a half. Sweetcorn would fall apart and make the dish sugary.

When should I add the salt?

After the maize and beans have cooked. Salt in the starting water toughens the bean skins and noticeably lengthens the cooking, so it goes in at the frying stage with the tomatoes.

Does githeri keep well?

Yes, and it improves on reheating. Families cook it in quantity and return it to the pan over several days; each pass dries it a little and makes it denser. Add a splash of water if it tightens too much.
