A Finnish baked mash of swede sweetened with molasses and nutmeg, cooked slowly until the top caramelises.

Method
- Peel the swede and cut it into 3 cm cubes. Boil in salted water for 35 minutes.
- Drain, keeping 150 ml of the cooking water, then pass the swede through a ricer.
- Soak the breadcrumbs in the cream for 10 minutes.
- Mix the mash with the soaked crumbs, eggs, molasses, nutmeg and salt. Loosen with the reserved water.
- Spread into a buttered dish, smooth the top and draw furrows across it with a spoon.
- Dot with butter and bake for 1 hour at 175 degrees, until the surface browns.
Those furrows raise the exposed surface and make ridges that brown ahead of the rest. Every Finnish family has its own pattern.
