Method

  1. Preheat the oven to 200°C and line a baking tray with parchment.
  2. Bring the plant milk, oil and salt to a simmer in a small saucepan.
  3. Pour the hot liquid over the tapioca flour in a mixing bowl. Stir with a wooden spoon; the dough will be lumpy and sticky, which is normal.
  4. Let it cool for 5 minutes, then add the mashed potato, nutritional yeast, garlic powder and cornflour. Knead by hand into a smooth, supple dough, adding a little more tapioca if it is too sticky.
  5. Oil your hands and roll the dough into walnut-sized balls. Space them out on the tray.
  6. Bake for 20 to 25 minutes until puffed and lightly golden. Eat warm, while the centre is still soft and chewy.

In Brazil these rolls go with morning coffee and are sold everywhere from street kiosks to airports. The raw balls freeze well; bake straight from frozen and add 5 minutes.

Frequently asked questions

Why pour boiling liquid over the tapioca flour?

That scalding is what gelatinises the starch and creates the signature stretchy texture. With merely warm liquid the dough stays sandy and the rolls will not puff. The lumpy, sticky dough at this stage is perfectly normal.

Can I swap the polvilho doce for another flour?

No, tapioca flour is the recipe: no wheat, rice or corn flour gives that elasticity. Just make sure you buy polvilho doce rather than polvilho azedo, which is sourer and behaves differently.

How should I store them?

They are far better on the day and harden as they cool. The best approach is to freeze the raw balls and bake them straight from frozen, adding about five minutes.
