Method

  1. Score the plantain skins along their length and lever them off with your thumb. Cut the flesh into 3 cm chunks.
  2. Stir the warm water, crushed garlic and 1 tsp of the salt together in a wide bowl; this is your soaking bath.
  3. Heat the oil to 160°C and fry the chunks for 4 minutes without colouring them. They should turn tender and pale yellow.
  4. Drain them and smash each one to about 1 cm thick with the base of a glass or a flat plate.
  5. Dip the discs in the garlic water for 5 seconds, drain them well, then return them to oil raised to 190°C for 2 minutes, until golden and brittle.
  6. Mash the avocados with the lime juice, coriander, remaining salt and plenty of pepper.
  7. Salt the patacones as they leave the oil and serve them scorching hot with the avocado dip.

The plantains must be properly green: once they yellow they sweeten and scorch in the fryer. The garlic-water dip seasons the inside and makes the second frying noticeably crisper.

Frequently asked questions

Can I use yellow plantains?

No, they need to be firmly green. Once the skin yellows the flesh turns sweet: it browns too fast in the oil and gives soft rounds instead of crisp ones. A green plantain is peeled by scoring the skin lengthways.

Why fry twice, with a garlic-water dip in between?

The first fry, at a gentle heat, softens the flesh without colouring it; the second, much hotter, builds the crust. The garlic water in between seasons the inside and wets the surface, which makes the second fry far crisper.

My patacones came out soft, what went wrong?

Either they were not drained properly after the garlic water and the moisture dropped the oil temperature, or the second fry was not hot enough. They also soften quickly as they cool, so eat them straight out of the oil.
