Method

  1. Mix the flour, water and yeast without salt, rest for 20 minutes, then add the salt and knead for 10 minutes until smooth and elastic.
  2. Prove for 2 hours at room temperature, divide into two balls and refrigerate them in sealed containers for 24 hours.
  3. Take the dough out 2 hours before baking. Meanwhile crush the tomatoes by hand, season lightly with salt, and do not cook them.
  4. Tear the fior di latte into strips and drain it for 30 minutes so the pizza does not go watery.
  5. Heat the oven as high as it goes, 250 to 280°C, with a stone or heavy tray inside for a full 45 minutes.
  6. Stretch each ball by hand leaving a thick rim, top with tomato then mozzarella, and bake for 7 to 10 minutes. Add basil and a trickle of oil as it comes out.

In Naples a margherita bakes in 90 seconds at 450°C, which no home oven will manage. A stone preheated for a long time is the best compromise for a soft, blistered base.

Frequently asked questions

Can I skip the 24 hours in the fridge?

You will get a pizza, but not this one: the long cold fermentation builds flavour in the dough and makes it more extensible, so it stretches by hand far more easily. If time is short, at least give it a long room-temperature rise with very little yeast.

Why is the tomato sauce not cooked?

The tomatoes are simply crushed by hand and salted: they cook on the pizza, in a few minutes of fierce heat. A pre-cooked sauce comes out of a second baking concentrated and sweet, losing the fresh acidity that balances the mozzarella.

Why is my pizza watery?

Nearly always the mozzarella. Cut the fior di latte into strips and let it drain for half an hour before topping. Being too generous makes it worse: scatter smaller pieces with gaps between them.
