Method

  1. Drain the soaked beans and cook them in a large pan of water with the bay leaf for 45 to 60 minutes, until they crush easily. Keep the cooking water. With tinned beans, skip this step.
  2. Heat the oil in a casserole and sizzle the cumin seeds for 30 seconds.
  3. Add the onions and brown them over medium heat for 10 minutes, until golden brown.
  4. Stir in the garlic, ginger and green chilli for 1 minute, then the turmeric, coriander and chilli powder.
  5. Pour in the tomatoes and salt, and cook for 10 minutes, stirring, until the sauce thickens and the oil beads on the surface.
  6. Add the beans with 400 ml of their cooking water (or plain water). Simmer uncovered for 20 minutes, crushing a few beans against the side to thicken the sauce.
  7. Finish with the garam masala, check the salt and serve over basmati rice with a little raw onion.

Rajma chawal, beans over rice, is the Sunday lunch of choice across North India. It tastes even better reheated the next day.

How do I know the tomato base is ready?

When the oil beads and separates on the surface, after about ten minutes. That tells you the water has cooked off and the sauce is done; adding the beans before that leaves a raw tomato taste.

Can I use tinned kidney beans?

Yes, two drained tins replace the dried beans and you skip the first cooking. Use plain water in place of the bean cooking liquid, and simmer a little longer so the beans take up the sauce.

How do I thicken the sauce without flour?

Crush a few beans against the side of the pot during the uncovered simmer: their starch binds the sauce naturally. That is what gives rajma its coating texture around whole beans.
