Banosh

Cornmeal cooked in soured cream the Hutsul way of the Carpathians, topped with fried mushrooms and crumbled brynza.

Method
- Bring the soured cream and water to a simmer in a heavy pan. Season with the salt.
- Rain in the cornmeal while whisking without pause so no lumps form.
- Lower the heat and stir with a wooden spoon for 25 minutes. The mass thickens and pulls away from the sides.
- Slice the onion and mushrooms. Fry them in the oil for 10 minutes until the liquid has gone.
- Check the banosh: it is ready when beads of yellow fat rise to the surface.
- Spoon into bowls, add the mushrooms, crumble over the brynza and scatter with parsley.
The doneness cue is fat separating and beading on top. While the mass stays smooth and matt, the cornmeal is still drinking the cream.
