Method

  1. Whisk the flour with the milk, eggs, salt and oil. Rest the batter for 20 minutes.
  2. Cook thin crêpes in a 20 cm pan, 1 minute a side. Stack them on a plate.
  3. Mash the curd cheese with the sugar, egg yolk and lemon zest.
  4. Spread 2 spoonfuls of filling on each crêpe, fold the sides in and roll up tightly.
  5. Heat the butter in a wide pan and lay the rolls in without crowding them.
  6. Brown for 3 minutes a side over medium heat, then serve with soured cream.
