Method

  1. Soak the soybeans in cold water for 8 hours, then drain and dry them well.
  2. Dry-roast the beans in a heavy pan for 12 minutes, stirring, until they brown and crack under the tooth.
  3. Heat the mustard oil to smoking point, then take it off the heat for 30 seconds to mellow it.
  4. Drop the fenugreek into the hot oil and wait for it to darken, then stir in the turmeric off the heat.
  5. Pour that oil over the still-warm soybeans and toss.
  6. Add the onion, chillies, ginger, garlic, lime juice and salt.
  7. Rest for 20 minutes, then scatter coriander over just before serving.

Sadheko in Nepal means anything dressed raw, with no final cooking. Fenugreek darkened in mustard oil stays the aromatic signature of the dish.

Can I skip soaking the soybeans?

No, everything else depends on it. A dry soybean is extremely hard: roasted as it is, it stays inedible rather than turning crisp and brittle. Eight hours in cold water rehydrates it, and the careful drying that follows lets you dry-roast it afterwards without steaming it.

Why heat the mustard oil to smoking point?

Raw, it has a sharp bitterness that dominates everything. Heating it until it smokes, then taking it off the heat for thirty seconds, tames that bite and leaves a rounder aroma. It is a standard step in the Nepali and Indian kitchens that use this oil.

How long does the dish stay crunchy?

A few hours only. The lime juice and salt gradually soften the roasted beans, which lose their bite through the day. You can roast the soybeans ahead and keep them in an airtight box, then dress them only twenty minutes or so before serving.
