Method

  1. Whisk the mashed banana with the sugar until smooth and frothy.
  2. Stir in the rice flour, cardamom, salt and the two tablespoons of oil, then add the water little by little.
  3. Beat the batter hard for five minutes: it should be smooth, glossy and fall from the whisk in a thick ribbon, like a stiff pancake batter.
  4. Rest for 20 minutes, then transfer to a piping bag or a squeeze bottle with a narrow nozzle.
  5. Heat the oil to 170 °C. Draw a 10 cm circle of batter onto the surface of the oil, closing the ring with one quick movement.
  6. Fry for 90 seconds, turn carefully with chopsticks or tongs, and fry another 90 seconds until deep golden.
  7. Drain on a rack and serve warm, on its own for breakfast or with a potato curry.

Sel roti belongs to the Tihar and Dashain festivals, when dozens are fried in one sitting. The pouring takes practice: your first rings will be wobbly, and no less delicious for it.

My batter scatters in the oil instead of holding a ring. Why?

It is too thin or underbeaten. After five minutes of hard whisking it should be glossy and fall from the whisk in a thick ribbon, like a stiff pancake batter. Add the water gradually and stop short of the 220 ml if it already feels right.

Can I make sel roti without banana?

The ripe banana supplies sweetness, moisture and part of the structure in a batter that has no gluten at all. Leaving it out changes the texture completely. Pick a properly speckled banana: the riper it is, the more smoothly it whips in.

How do I turn the rings without breaking them?

Wait out the first 90 seconds so the surface is set and coloured before you touch it. Slide chopsticks or tongs underneath rather than gripping the ring. At 170 °C the crust forms quickly enough to hold together.
