Method

  1. Grate the potatoes and onion finely into a large bowl. Grate them together, as the onion keeps the potato from discolouring.
  2. Tip everything into a clean tea towel and wring it hard over a bowl to squeeze out as much liquid as you can.
  3. Let the liquid stand for two minutes, pour off the clear water and scrape the white starch settled at the bottom back into the potatoes.
  4. Stir in the egg, flour, salt and pepper, then cook straight away; the mixture does not keep.
  5. Heat the oil over medium-high and drop in spoonfuls, flattening them into thin cakes. Fry for 4 minutes a side until deep brown and crisp, then drain on a rack.
  6. In another pan, sauté the mushrooms in the butter over high heat for 8 minutes, salting only at the end so they brown rather than steam.
  7. Serve the draniki scalding hot, crowned with mushrooms and a spoonful of soured cream.

Wringing out the liquid is the step that decides everything: the drier the gratings, the crisper the fritter. Saving the settled starch means you need less flour, which would otherwise weigh the batter down.

Why scrape up the starch at the bottom of the bowl?

Squeezing the grated potato throws away starch along with the water. Left to stand for two minutes it settles as a white layer: returned to the mixture, it binds the pancakes and saves you adding more flour, which would make them stodgy.

Why grate the onion together with the potatoes?

Compounds in onion slow the oxidation that turns grated potato grey and then black. Grated together, both stay pale far longer and you can assemble the batter without racing the clock.

Why can't the batter be made ahead?

Even with the onion it darkens and weeps within minutes, which makes soggy pancakes. Grate, squeeze, season and fry straight away. Cooked draniki, on the other hand, reheat well in the oven on a rack.
