Method

  1. Boil the potatoes whole and unpeeled in salted water for 20 minutes, then cool them completely before peeling and cutting into 1 cm dice.
  2. Boil the eggs for 9 minutes, cool under cold running water, peel and chop into small dice.
  3. Cut the cucumbers and radishes to the same size as the potato; okroshka is eaten with a spoon, so everything should be even.
  4. Finely slice the spring onions and dill, then bruise them in the base of the serving bowl with 1 tsp salt and the back of a spoon to draw out their juices.
  5. Add all the vegetables and the egg, pour over the kefir, iced water and mustard, and fold together gently.
  6. Taste, season with salt and pepper, and chill for at least an hour before serving in well-cooled bowls.

Okroshka is what Russians eat in a heatwave, and it should come to the table almost icy. Thin it with more water to taste, somewhere between a soup and a liquid salad.

Why crush the dill and spring onion with salt in the bowl first?

Salt and pressure break the fibres and release the herbs' juices, which then flavour the whole bowl of kefir instead of sitting on top. It takes only a moment with the back of a spoon, before the vegetables and liquid go in.

Why cut everything to the same size?

Okroshka is eaten with a spoon: every spoonful should gather a little of everything. Uneven dice means the big pieces sink and the soup is eaten in two stages. One centimetre for the potato, cucumber and radish is the right measure.

Can I adjust how thick the soup is?

Yes, and that is the custom: you loosen it with iced water to taste, somewhere between a soup and a liquid salad, depending on how thirsty you are. Season again afterwards, since the added water dilutes it. It should come out of the fridge almost icy, after at least an hour.
