Method

  1. Toast the Sichuan peppercorns in a dry pan for 2 minutes until fragrant, then crush them in a mortar.
  2. Gently lower the tofu cubes into a pan of simmering salted water for 2 minutes, then drain. This firms them up.
  3. Heat the oil in a wok and fry the chopped mushrooms over high heat for 5 minutes until browned and dry.
  4. Lower the heat, add the doubanjiang, black beans, chilli flakes, garlic and ginger. Fry for 1 minute until the oil turns red.
  5. Pour in the stock, soy sauce and sugar. Bring to a simmer, slide in the tofu and cook for 5 minutes, nudging it with the back of a spoon rather than stirring.
  6. Add the cornflour mixture and let it thicken for 1 minute. Scatter over the ground Sichuan pepper and spring onions, and serve over white rice.

“Ma” is the numbing tingle of Sichuan pepper and “la” the burn of chilli, and the dish needs both. Adjust the pepper to your own tolerance.

Why blanch the tofu before cooking it?

Two minutes in gently simmering salted water firms the silken cubes so they hold their shape in the sauce instead of collapsing. It also seasons them lightly from within. Lift them out with a slotted spoon, never tongs.

How do I keep the tofu from breaking up in the wok?

Never stir with a spoon: nudge the sauce underneath the cubes with the back of a spoon, or swirl the wok. Silken tofu shatters at the slightest agitation. Those five minutes of simmering should stay very gentle.

Can I substitute the doubanjiang?

Not easily, since this fermented chilli bean paste supplies the red colour, the saltiness and the depth all at once. Another fermented chilli paste comes closer than a plain hot sauce, but the result is no longer really mapo tofu. The fermented black beans are equally hard to replace.
