Veiled Farm Girls

A Norwegian layered dessert of apple compote, toasted sweet breadcrumbs and vanilla whipped cream built in glasses.

Method
- Peel and dice the apples, then cook them for 15 minutes with the sugar, lemon juice and 3 tbsp of water.
- Crush roughly with a fork, stir in the cinnamon and leave to cool.
- Melt the butter in a frying pan, then add the breadcrumbs and brown sugar.
- Stir for 8 minutes over medium heat until the crumbs brown and fall apart. Spread them on a cold plate.
- Whip the cream with the vanilla to soft peaks.
- Build the glasses in alternating layers of compote, crumbs and cream. Finish with cream and a pinch of crumbs.
The name means veiled farm girls: the white cream covers the compote like a veil. Assemble at the last minute, since the crumbs soften within an hour.
