Haitian rice simmered in its own red bean broth, scented with thyme, clove and a whole scotch bonnet chilli.

Method

  1. Drain the beans, cover with 1.2 litres cold water and simmer covered for 45 minutes, until tender. Keep the beans and their cooking liquid separately.
  2. Heat the oil in a casserole and soften the onion for 5 minutes, then add the garlic, thyme and cloves.
  3. Add the drained beans and crush a small ladleful against the side of the pot to thicken the broth.
  4. Pour in 600 ml of the bean cooking liquid, the coconut milk if using, the salt and pepper. Bring to a gentle simmer.
  5. Stir in the rice and float the whole chilli on top. The liquid should sit about a centimetre above the rice.
  6. Cook uncovered until the liquid drops to the level of the rice, then cover and turn the heat to its lowest for 20 minutes.
  7. Lift out the chilli and thyme, rest off the heat for 5 minutes, then fluff with a fork and serve.

The scotch bonnet stays whole throughout: it releases its fruity perfume without the burn. If it bursts the dish gets considerably fiercer, so move it gently.

Why cook the rice in the bean liquid?

That liquid carries the colour, the starch and the flavour of the dish: the rice comes out pinkish brown and fragrant in a way no later seasoning can reproduce. Never pour it away, and measure it carefully for the rice.

Why does the scotch bonnet stay whole?

Its flesh is intensely aromatic, but the burn is concentrated in the seeds and the white ribs. Left intact on the surface, it releases its fruity scent into the steam without making the dish fiery. Lift it out before serving, unpierced.

How do I know when to cover the pot?

Cook uncovered until the liquid just reaches the surface of the rice and craters appear. Only then cover and drop the heat to its lowest: cover too early and the rice is waterlogged, too late and the base scorches.
