Method

  1. Heat the oil in a large lidded pan. Drop in the cumin seeds and let them sizzle for 30 seconds.
  2. Add the onion and brown it for 5 minutes, then the garlic, ginger and chilli for 1 minute.
  3. Stir in the turmeric and ground coriander, then the tomatoes. Cook for 3 minutes, crushing the tomatoes into a thick paste.
  4. Add the potatoes and salt, stir well to coat, cover and cook over low heat for 10 minutes, stirring once.
  5. Add the cauliflower, stir, cover again and cook a further 15 minutes. Add a splash of water only if the bottom starts to catch.
  6. Take off the lid and raise the heat for 3 minutes to drive off moisture and brown the edges.
  7. Sprinkle over the garam masala and fresh coriander, and serve with rice or chapatis.

Aloo gobi should be dry, with no sauce. Resist the urge to add water and let the vegetables cook gently in their own steam under the lid instead.

Frequently asked questions

Why does my cauliflower collapse into mush?

It cooked too long or was stirred too much. The cauliflower goes in fifteen minutes after the potatoes because it cooks far faster, and every stir breaks up florets that are already tender. Cut evenly sized florets and stir only two or three times in the whole cooking.

Why does the recipe specify waxy potatoes?

Because they hold their cubes through twenty-five minutes under a lid. A floury variety soaks up the steam, crumbles, and coats the cauliflower in thick mash, which works against a dry curry where every piece should stay distinct.

Can the garam masala go in with the other spices?

Better not. Garam masala is an already-toasted blend whose aromatics are volatile, and long cooking simply burns them off. Scatter it at the end alongside the fresh coriander so it is still there in the first mouthful.
