Method

  1. Cut the tomatoes into rough, generous wedges and salt them lightly in the serving bowl.
  2. Peel the cucumber in stripes, halve it lengthways and cut into thick one-centimetre pieces.
  3. Slice the green pepper into thin rings and the red onion into half-moons.
  4. Combine the vegetables and add the olives whole, stones in, tossing lightly.
  5. Lay the slab of feta on top without crumbling it, as tradition demands.
  6. Pour over the olive oil and vinegar, crush the oregano between your fingers over the top, and serve with bread for the juices.

Real horiatiki never contains lettuce; that is not an oversight but the whole point of a village salad. The dressing pooled at the bottom of the bowl is the best part.

Why is there no lettuce in it?

That is not an omission: horiatiki is the village salad by definition, built on summer vegetables and feta, with no leaves. Adding them changes the dish and dilutes the juices in the bottom of the bowl, which are the best part.

Should I crumble the feta?

No, it sits on top whole, in a single slab. Everyone breaks off what they want, and the block does not disintegrate into the oil and vinegar the way crumbled feta would.

How do I make it vegan?

Everything else already is, so only the feta is in question. A plant-based feta alternative placed the same way, in one piece, keeps the shape of the dish. Salt the tomatoes in the bowl as directed, since that is what draws out the juices.
