Method

  1. Heat the wok over very high heat with 1 tbsp oil. Pour in the eggs, scramble quickly and set aside.
  2. Add the remaining oil, garlic and chilli and stir-fry for 20 seconds. Add the carrot, pepper and green beans and stir-fry for 3 minutes, keeping them crunchy.
  3. Add the rice, pressing with the spatula to separate the grains. Stir-fry for 3 minutes without stopping.
  4. Pour in the soy sauces, add the eggs and spring onions. Toss for 1 minute.
  5. Off the heat, stir in the Thai basil. Serve with cucumber slices and a lime wedge.

Cold day-old rice is essential: fresh rice is too moist and turns mushy in the wok. Without eggs and with tamari, the dish is vegan and gluten-free.

Frequently asked questions

Can I use freshly cooked rice?

That is the main trap in this dish: fresh rice still holds moisture and goes pasty in the wok. If you have no day-old rice, spread cooked rice on a tray, let it cool, then dry it uncovered in the fridge for at least an hour.

How do I make this vegan and gluten free?

Leave out the eggs, which are not structurally necessary, and use tamari in place of soy sauce, as it contains no wheat. Check the sweet soy sauce too, which is usually wheat-based, or replace it with a spoonful of sugar.

What can replace Thai basil?

Its aniseed scent is distinctive and Italian basil does not really reproduce it, though it will do at a pinch. Always add it off the heat, since it loses all its aroma when cooked.
