Method

  1. Take the yoghurt out well ahead of time; it needs to be at room temperature so it does not chill the eggs.
  2. Crush the garlic with a pinch of salt, stir it through the yoghurt, then spread it thickly across two warmed shallow bowls.
  3. Bring a pan of water to a bare simmer, add the vinegar and stir a whirlpool. Slide in the eggs one at a time and poach for 3 minutes.
  4. Lift the eggs onto kitchen paper and trim away any straggly white with a spoon.
  5. Melt the butter over low heat until it foams and smells nutty, then take it off the heat and stir in the Aleppo pepper.
  6. Set two eggs on each bowl of yoghurt, spoon over the chilli butter, scatter with dill and serve with toast.

Çılbır is an Ottoman dish recorded since the fifteenth century and served at the Topkapı palace. The only real pitfall is fridge-cold yoghurt, which kills the warmth of the eggs and butter.

Why does the yogurt have to be at room temperature?

Straight from the fridge it chills the poached eggs instantly and sets the butter poured over them, which turns grainy instead of coating. Take it out at least half an hour ahead, and warm the plates too.

How do I get neat poached eggs?

Use very fresh eggs: the white is still tight and does not scatter. The vinegar and the swirl help gather the white around the yolk, and the water should tremble rather than boil. Any wisps left can be trimmed with a spoon after draining.

What can I use instead of Aleppo pepper?

It is a mild Turkish chilli, fruity and slightly salty, more aromatic than hot. Sweet paprika with a pinch of hot chilli comes close. Stir it into the butter off the heat, otherwise it scorches and turns bitter.
