Malaysian green pandan crepes rolled around coconut caramelised in palm sugar, eaten at afternoon tea.

Method
- Whisk the flour, coconut milk, pandan extract and salt to a smooth batter. Strain and rest for 30 minutes.
- Melt the palm sugar in the water with the knotted pandan leaves over low heat.
- Add the grated coconut and cook for 12 minutes, stirring, until the mixture turns sticky and dry.
- Pull out the pandan leaves and let the filling cool.
- Heat a lightly oiled non-stick pan and pour in a thin ladle of batter.
- Cook for 90 seconds on one side only, until the surface looks dry. Do not flip.
- Spoon filling along one edge, fold the sides in and roll tightly.
Pandan extract comes from blending the leaves with a little water and squeezing out the juice. Shop-bought green usually comes from colouring: the real leaf gives a duller green and a scent of warm rice.
