Rolled Japanese omelette with chard

Tamagoyaki, the lightly sweet soy-seasoned rolled omelette, here enriched with finely shredded chard. It goes into a bento box.

Method

  1. Beat the eggs with the soy sauce and honey. Stir in the shredded chard.
  2. Heat a rectangular tamagoyaki pan or a small non-stick pan over medium heat and oil it lightly.
  3. Pour in a third of the mixture and let it set for 1 minute. Roll the omelette towards you with a spatula, then push it to the far end of the pan.
  4. Oil again and pour in another third, lifting the roll so the egg runs underneath. Let it set, then roll it around the first roll.
  5. Repeat with the rest. Brown the roll on all sides for 1 minute.
  6. Let it cool slightly, cut into thick slices and scatter with sesame. Serve with hot sauce or horseradish if you like.

The Japanese rectangular pan makes rolling easier, but a round pan works too. Use tamari instead of soy sauce for a gluten-free version.

How do I roll it without a rectangular pan?

A small round non-stick pan works: the roll simply gets rounded ends, which you trim off when slicing. The motion is the same, roll it towards you then push the roll back to the far side before pouring the next layer.

Why do my layers not stick together?

You have to lift the finished roll as you pour the next layer so the raw egg runs underneath and joins them. And do not let a layer set completely before rolling: still slightly wet on top, it bonds to the one before.

How do I make it gluten-free?

Use tamari in place of the soy sauce, which is the only source of wheat here. The eggs, honey, chard and sesame are all naturally gluten-free.
