Method

  1. Soak the bread in a little water for 10 minutes, then squeeze it out.
  2. Put the tomatoes, pepper, cucumber, garlic, bread, vinegar and salt in a blender. Blend for a good couple of minutes until completely smooth.
  3. With the motor running, trickle in the olive oil so the soup emulsifies, turning orange-pink and velvety.
  4. Pass through a fine sieve if you want it silky, then adjust the salt and vinegar.
  5. Chill for at least 2 hours. If it is too thick, thin with ice-cold water.
  6. Serve well chilled in bowls or glasses, with the diced vegetables and croutons alongside.

In Andalusia gazpacho is drunk as much as it is eaten, often from a glass in the heat of the afternoon. The green pepper gives it its characteristic edge of bitterness.

Frequently asked questions

Mine stays red and watery instead of turning orange and velvety. Why?

The oil never emulsified. Pour it in a thin stream with the blender running, into a soup that is already perfectly smooth: long blending plus the soaked bread is what lets the oil bind and shift the colour.

What is the stale bread for?

It thickens the soup and carries the emulsion with the olive oil. Without it the gazpacho stays a vegetable juice that separates in the glass. It is also why this recipe is not gluten free.

Can I leave out the green pepper?

You can, but you lose the faint bitterness that defines Andalusian gazpacho and balances the sugar in ripe tomatoes. If you skip it, go easier on the vinegar, because the balance shifts.
