Method

  1. Hard boil the eggs for 9 minutes, cool them under running water and peel.
  2. Grate the cooked beetroot on a fine grater. Grate the peeled cucumber and slice the radishes.
  3. Whisk the kefir with the yoghurt in a large bowl until smooth.
  4. Fold in the beetroot, cucumber and radishes. The soup turns a deep pink.
  5. Add the chopped dill, lemon juice and salt. Taste: the soup should stay sharp.
  6. Chill for 2 hours. Serve with half an egg set in the middle of each bowl.

Cold mutes flavour. Season this soup after it comes out of the fridge, never before, and add more lemon at the last moment if it tastes flat.

Frequently asked questions

Why season the soup only after chilling?

Cold dulls our perception of salt and acidity: a soup seasoned perfectly at room temperature tastes flat once it is ice cold. Taste and adjust the salt and lemon straight from the fridge, just before serving.

Why grate the beetroot and cucumber rather than dice them?

Grating releases the juices that stain the kefir deep pink and flavour the whole bowl, whereas dice would just sit as lumps in a white liquid. It also gives a texture you can spoon up without chewing.

Can the kefir split?

The kefir and yogurt mixture is stable as long as it stays cold, but the acidity of the lemon can make it grainy if it is dumped into a lukewarm liquid. Whisk the dairy together cold first, then trickle the lemon juice in.
