Method

  1. Lay the onion cut side down in a hot dry pan and let it blacken for 4 minutes. That scorch gives the broth its depth.
  2. Grate the beetroot into coarse shreds. Slice the carrot and parsnip into rounds.
  3. Put all the vegetables into cold water with the bay and allspice. Bring to a bare shiver, never a boil.
  4. Keep it at that shiver for 40 minutes, uncovered. A rolling boil dulls the red.
  5. Add the crushed garlic and marjoram, cut the heat and let it steep for 15 minutes.
  6. Strain through a fine sieve without pressing the vegetables. Season with the lemon and sugar, then salt.
  7. Cook the uszka in a separate pan, divide them between cups and pour the scalding barszcz over.

Polish kitchens often use zakwas, beetroot juice fermented for a week in salted water, in place of the lemon. It brings a round, lactic sourness. Stir it in off the heat so its cultures survive.

Why does my broth turn brown instead of staying red?

It boiled. Beetroot pigment is fragile at high heat and quickly dulls to brown. Keep the liquid at a simmer where bubbles barely break the surface. Acidity helps hold the colour too, but it goes in after straining, so watching the heat is the real safeguard.

Is this barszcz gluten free?

The broth itself entirely is: beetroot, root vegetables, spices and lemon. It is the uszka, small wheat-dough dumplings, that are not. Serve the broth on its own in a cup, as is often done, or add diced boiled potato instead.

Why strain without pressing the vegetables?

Pressing pushes pulp through the sieve and clouds a broth that should stay clear and bright. Just let it drip. The cooked beetroot keeps its flavour and can be used the next day, grated into a salad with a little vinegar.
