Method

  1. Put the kombu and shiitake in the cold water and soak for 30 minutes if you have time, otherwise go straight to the heat.
  2. Warm gently until the water barely trembles, then lift out the kombu before it boils to avoid bitterness. Let the shiitake steep 5 more minutes.
  3. Meanwhile, soak the wakame in a bowl of cold water for 5 minutes, then drain and squeeze it lightly.
  4. Remove the shiitake, slice them and return them to the broth with the tofu and wakame. Heat for 2 minutes without boiling.
  5. Turn off the heat. Loosen the miso in a ladle of hot broth, then stir it back into the pan gently.
  6. Serve straight away in bowls, scattered with spring onion and a drop of sesame oil.

Miso should never boil, as fierce heat kills both its aroma and its live cultures. Always stir it in at the end, with the heat off.

Frequently asked questions

Why remove the kombu before the water boils?

Past a bare simmer, kombu releases bitter compounds and a slippery texture that clouds the broth. Lifted out at the first tremble, it gives a clear, rounded dashi. The cold soak has already drawn out most of its flavour.

What happens if the miso boils?

High heat destroys its volatile aromas and live cultures, and the broth loses its fragrance. Always turn off the heat, slacken the miso in a ladleful of hot broth to avoid lumps, then stir it gently back into the pan.

Which miso should I choose, and is this soup gluten free?

White miso is mild and slightly sweet, red is saltier and more fermented; either works, adjusted to taste. For a gluten-free version choose a rice miso, as some misos contain barley. This kombu and shiitake dashi is itself free of fish.
